Mongolian Beef

Ingredients

  • vegetable oil
  • 1/2 tsp. ginger
  • 1 Tbsp. garlic
  • 1/2 cup soy sauce
  • 1/2 cup water
  • 3/4 cup dark brown sugar
  • flank steak
  • cornstarch
  • 2 large green onions, sliced

Step 1

Slice flank steak against grain into 1/4" pieces. Dip the steak into cornstarch to apply a thin dusting to both sides. Let the beef sit for about 10 minutes so that the cornstarch sticks.

Make the sauce by heating 2 teaspoons of vegetable oil in a saucepan over med/low heat. Add ginger and garlic to pan and saute. Add soy sauce and water and mix. Dissolve brown sugar in sauce then raise heat to medium and boil for 2-3 minutes.

Heat oil in wok over medium heat, add beef and saute until beef just begins to darken on edges. Remove from pan, don't worry that beef isn't cooked through.

Pour oil out of skillet. Put pan back on heat and dump the meat back in and simmer for one minute. Add sauce and then green onions. Cook while mixing so that everything is coated in sauce.
