Ingredients
- 1 box white cake mix
- 1 cup sweetened shredded coconut, chopped
- 3/4 cup (1 1/2 sticks) butter, melted
- 1/2 cup finely chopped walnuts
- 1 cup chopped rhubarb
Preparation
Step 1
Heat oven to 350 degrees. Grease a 8" square dish.
In bowl, combine cake mix and coconut. Slowly drizzle in butter, stirring until large crumbs form.
In separate bowl, combine 1 cup crumbs and walnuts; set aside. Press remaining crumbs into prepared pan.
Bake 18 minutes or until lightly golden; remove from oven. Sprinkle rhubarb, the reserved walnut-crumb mixture over hot crust.
Bake additional 15 minutes or until crumbs are golden.
