ONIONS*****Frizzled Ginger and Scallions

16/10/15 - This is always great as a finishing touch if you have the time. Most recently, I served it over my Japanese Barley & Rice. Bet it would also be great on my Indonesian Rice Bowl or my Indonesian Fried Rice or any of a variety of rice bowls. I've also seen it used on thicker soups, like pea soup and ham, etc.

Ingredients

  • 2 tbsp. olive oil (all but 1 tsp. drained off)
  • 3 green onions, cut lengthwise into narrow strips about 2" long
  • 1 " long piece of fresh ginger, peeled and cut into fine matchsticks
  • 1 medium jalapeno, halved, seeded and thinly sliced (no heat remains after you fry it - just the tiniest hint - but it does provide for a colour contrast)

Preparation

Step 1

* *Heat* a heavy, non-stick frying pan over medium-high heat until hot. *Add* the green onions and the ginger and fry, *stirring* often, until golden brown and crispy (with some green still visible on the onions).

* *Remove* with a slotted spoon to a paper-towel lined bowl and *reserve* until serving time. Depending on what you are serving it with, sprinkle lightly with salt after you remove it to the towels. It will stay crispy for several hours on the counter, lightly covered with another paper towel.

* *Note* that this continues to cook a bit once removed from the oil.

* *Save* the oil for sauteing other things!
