Helen's Peanut Brittle

Ingredients

  • 1 cup of raw peanuts
  • 1 cup sugar
  • 1/2 cup white Karo syrup
  • 1/8 tsp. salt
  • 1 tsp. butter
  • 1 tsp. vanilla
  • 1 tsp baking soda

Preparation

Step 1

Stir together peanuts, sugar, syrup and salt in a microwave safe bowl. Cook on high for 8 min., stir well after 4 min.
Add butter and vanilla to peanut mixture. Stir to blend.
Return to micro and cook additional 2 min. on high.

Peanuts will be lightly browned and syrup very hot. Add baking soda and gently stir until foamy.
Pour onto greased baking sheet.
Pull apart.
