Corn and Avocado Salsa

Ingredients
- Dressing:
- 1 16 oz. package of frozen corn
- 1 small cans sliced black olives, drained
- 1 medium sweet red pepper, chopped
- 1 small onion chopped
- 3 medium ripe avocados
- 1/3 cup olive oil
- 1/4 cup lime juice
- 3 Tbs. white vinegar
- 5 garlic cloves, minced
- 1/2 tsp. salt

Preparation
Step 1
In a large bowl combine corn, olives, red pepper and onion.
In a small bowl combine garlic, olive oil, lime juice, vinegar, salt and pepper. Mix well.
Pour over corn mixture. Toss to coat. Cover and chill overnight.
Just before serving, chop avocados and stir into salsa.
