Ingredients
- Miso Marinade:
- 4 butterfish fillets, about 7 ounces each
- 1 1 /2 teaspoons shichimi
- 1/2 cup white miso (shiro miso)
- 1/2 cup red miso
- 1 1/2 tablespoons minced ginger
- 2 teaspoons minced garlic
- 1 /2 cup hoisin sauce
- 2/3 cup sugar
- 1 /2 cup sake
Preparation
Step 1
Using a bowl large enough to hold all the fish, combine the ingredients for the marinade. Then simply place shichimi sprinkled butterfish in the bowl; cover and refrigerate overnight.
When ready to eat, prepare the grill, remove the fish and grill to desired doneness (usually 1 1/2 to 2 minutes per side over medium heat for medium doneness). As shown here, this dish is excellent with steamed rice and blanched garlic spinach and can be served with sweet ponzu sauce (mirin, soy sauce, red chile flakes, lemon juice). Top with caviar if desired for an extra special touch. This dish also works well with salmon, which is of similar texture.
