Shadow Rock Taco Salad

This was a recipe that we fixed virtually every week in the early days of Shadow Rock. We had it for planning meetings, cadre meetings, etc. It became known as the Shadow Rock Salad. Everyone knew what we were talking about.

Ingredients

• 1 head iceberg lettuce
• 2 tomatoes
• 1 green pepper
• 1 small sweet onion
• 1 package corn chips
• Small can black olives
• 1 lb shredded cheddar cheese
• 1 lb ground beef
• 1 pkg. (envelope) Lipton Onion soup.

Preparation

Step 1

Cut veges to make salad. Brown ground beef with Lipton onion soup. Add to salad mixture, along with corn chips, olives, cheese. Toss

Use your favorite taco sauce or salsa for the dressing.
