Southwestern Chicken & White Bean Soup

This makes a huge pot of soup, after it's cooked freeze some for a noncooking day.

Ingredients

  • 4 Large Chicken Breasts
  • 2 Large Onions
  • 6 cloves garlic, minced
  • 3 tsp. ground cumin
  • Large can chicken broth (or use broth from boiling chicken)
  • 1 bottle salsa
  • 4 cans (15oz) small white beans, rinsed and drained
  • 3 cups frozen whole kernel corn

Preparation

Step 1

Boil chicken, if making your own broth, other wise brown chicken, with onion garlic and cumin. Cook until onion is tender.

Add broth, salsa, beans and corn. Fill pot with water. Heat to a boil, then cover and cook on low.
