Ingredients
- Olive oil
- 1 lb. ground beef
- 1 chopped onion
- 1 green pepper, chopped
- 1 tsp. parsley flakes
- 2 cloves garlic, crushed
- ¾ tsp. chili powder
- ½ tsp. cumin
- ½ tsp. dried chilies
- Salt and pepper
- ½ cup Kernel corn
- 1 tomato, chopped
- 2 – 4 tbs. sour cream
- 3 ½ cups tomato sauce
- 1 tbs. white vinegar
- ½ tsp. each oregano, basil, rosemary, garlic powder
- 1 tsp. brown sugar
- 6 tortillas
- 2 cups grated cheddar cheese

Preparation
Step 1
In the oil fry the beef, onions, and green peppers. Season the meat with all the spices. Add the corn, tomato, sour cream, and ½ cup tomato sauce. Cook for 15 minutes. Combine the remaining ingredients, except for the tortillas; to make the sauce. Fill the tortillas with the beef mixture. Cover with the sauce and top with cheese. Bake; covered at 350 degrees for 45 minutes.
