Red Potato Salad with Bacon and Herbs

  • 8 strips of bacon
  • 1/4 cup minced red onion
  • 1/2 cup chipped fresh basil
  • 4 hard boiled eggs, chopped
  • 2 tablespoons red wine vinegar
  • 1/4 cup mayonnaise
  • 2 pounds small red potatoes, quartered
  • 1/2 teaspoon pepper
  • 1 tablespoon chopped fresh tarragon
  • 1/2 teaspoon salt

Preparation

Step 1

1. Place potatoes in a large saucepan and add just enough water to cover. Bring to a boil over high heat. Reduce heat to medium and simmer for 10 minutes or until potatoes are fork tender. Drain & transfer to a large bowl.
2. Meanwhile, cook bacon until crisp. Chop cooked bacon and add to potatoes, along with eggs and red onion.
3. Stir remaining ingredients together in a small bowl. Add dressing to the potatoes and toss to coat. Serve warm or chilled
