Apple Feta Risotto

Ingredients

  • 2 minced shallots
  • 1 clove minced garlic
  • 2 tbsp of olive oil
  • 1/2 cup of Arborio rice
  • 1/2 cup of dry white wine
  • 2 cups of chicken broth
  • 1/2 cup of frozen peas
  • an apple
  • small portion of feta cheese

Preparation

Step 1

In a saucepan, sauté 2 minced shallots and 1 clove minced garlic in 2 tbsp of olive oil til browned. Add 1/2 cup of Arborio rice and sauté until the rice is opaque.

Add 1/2 cup of dry white wine and incorporate over low heat. Incorporate 2 cups of chicken broth 1/2 cup at a time. In the final go round, add 1/2 cup of frozen peas then peel core and finely chop an apple and add it to the risotto just before serving. Serve with a small portion of feta crumbled over top.
