Apricot Strawberry Shortcake

Ingredients
- SHORTCAKE
- 1 1/2 c flour
- 1/2 c cornmeal
- 3 T sugar
- 4 t BP>>>>>mix
- 4T butter, cut into small pieces>cut in (pea size)
- 1-1 1/4 c buttermilk>>add 1 c & stir till dough holds
- together as a lump.If seems dry add more
- buttermilk, 1 T at a time.
- Knead 1 min. Pat into a round cake, 1" thick.
- Cut into 6 wedges. Place wedges on greased
- baking sheet.
- Bake 10-12 min @425.
- APRICOT-STRAWBERRY TOPPING
- 6 c strawberries
- 6 fresh apricots, 1/4" wedges
- 1 t grated fresh ginger
- 2 t sugar
- Mash 1/2 the straberries, 1/2 the apricots, ginger &
- sugar in a bowl. Stir in the remaining apricots & straw-
- berries. Let sit at least 15 min.
- WHIPPED YOGURT CREAM
- 1 1/2 c whipping cream
- 1 t sugar>>whip to soft peaks
- 1 1/2 c nonfat plain yogurt, drained
- 1/2 t vanilla
- 1 t sugar>>>beat to soft peaks. Gently fold into
- whipped cream.

Preparation
Step 1
Split each shortcake.
Spoon fruit over, top with shortcake, and whipped cream.
Serve immediately.
