Apricot Strawberry Shortcake

Ingredients

  • SHORTCAKE
  • 1 1/2 c flour
  • 1/2 c cornmeal
  • 3 T sugar
  • 4 t BP>>>>>mix
  • 4T butter, cut into small pieces>cut in (pea size)
  • 1-1 1/4 c buttermilk>>add 1 c & stir till dough holds
  • together as a lump.If seems dry add more
  • buttermilk, 1 T at a time.
  • Knead 1 min. Pat into a round cake, 1" thick.
  • Cut into 6 wedges. Place wedges on greased
  • baking sheet.
  • Bake 10-12 min @425.
  • APRICOT-STRAWBERRY TOPPING
  • 6 c strawberries
  • 6 fresh apricots, 1/4" wedges
  • 1 t grated fresh ginger
  • 2 t sugar
  • Mash 1/2 the straberries, 1/2 the apricots, ginger &
  • sugar in a bowl. Stir in the remaining apricots & straw-
  • berries. Let sit at least 15 min.
  • WHIPPED YOGURT CREAM
  • 1 1/2 c whipping cream
  • 1 t sugar>>whip to soft peaks
  • 1 1/2 c nonfat plain yogurt, drained
  • 1/2 t vanilla
  • 1 t sugar>>>beat to soft peaks. Gently fold into
  • whipped cream.

Preparation

Step 1

Split each shortcake.
Spoon fruit over, top with shortcake, and whipped cream.

Serve immediately.
