Roasted Garlic

Ingredients

  • 4 heads garlic
  • 4 Tablespoons olive oil
  • salt, to taste
  • pepper, freshly ground
  • 4 Tablespoons Parmesan cheese, grated
  • 1/2 teaspoon saffron threads

Preparation

Step 1

Slice top half inch from garlic heads. Remove some of the papery skins, leaving heads intact. Place in garlic baker, drizzle each with 1 Tablespoon olive oil and sprinkle lightly with salt and pepper. Cover and bake at 275 degrees for one hour. Uncover and sprinkle each head with 1 Tablespoon and a few saffron threads. Cover and bake another hour. Serve warm.
Roasted cloves may be squeezed from heir skins and spread onto crisp crackers or slices of French or Italian bread.
