dee's mighty muffins

blueberry- instead of raisins and walnuts, add 1 c blueberries
banana-nut- add 1 ripe mashed banana and reduce applesauce to 1/4 c. omit raisins and increase nuts to 1 c.
pumpkin- use 1/2 c canned pumkin instead of applesauce. replace cinnamon and nutmeg with 1 tbsp plus 1 tsp pumpkin pie spice. can also omit raisins and walnuts and add 1 c dried cranberries
Ingredients
- dry ingredients:
- 2 c raw oat bran
- 2 1/8 tsp baking powder
- 1 tbsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp sea salt
- wet ingredients:
- 1 c almond milk
- 1/2 c unsweetened applesauce
- 2 egg whites
- 1 tsp vanilla
- 1/2 tsp liquid stevia
- third set ingredients:
- 1/2 c raisins
- 1/2 c walnuts chopped
- 1/2 c honey

Step 1
preheat oven 400. line muffin pans iwth paper muffins cups.
combine dry ingredients in large mixing bowl and mix together wthroughly with wire whisk. in seperate mixing bowl combine wet ingredients with wire whisk until mixture becomes frothy. slowly add wet ingredients to dry ingredients and mix throughly with wooden spoon. fold in raisins and walnuts. last step is to add honey slowly to mixture while stirring.
fill muffin cups and bake for 10 minutes at 400 and then lower to 350. bake an additional 10 minutes or untl muffings are golden brown and knife inserted comes out clean.
