Chicken Shish Kabob

Ingredients

  • 2 lbs. skinless, boneless chicken breasts, cut into cubes
  • 2 medium onions, cut into sections
  • 2 sweet green peppers, seeded and cut into squares
  • 12 cherry tomatoes
  • ½ cup olive oil
  • 1 garlic clove, minced
  • Juice of 2 lemons
  • 1 ½ tsp. dried oregano
  • ½ tsp. sugar
  • Salt and pepper

Preparation

Step 1

Combine the minced garlic, lemon juice, oregano and sugar. Whisk together the ingredients while slowly pouring in the olive oil in a thin stream into a bowl. Season the marinade to taste.

Combine the chicken and enough of the marinade to completely coat the chicken. Chill for at least six hours.

Soak the wooden skewers in water for 20 minutes. Remove the chicken from the refrigerator and allow it to return to room temperature. Thread the chicken and vegetables onto the skewers. Brush the grill rack with olive oil, then place the kabobs on the grill, basting with marinade until done. Serve immediately.
