Cream Cheese Potato Soup (serves 4-6)

Ingredients

  • 4 cups chicken broth
  • 4 cups peeled and cubed potatoes
  • ¼ cup finely chopped scallions (or onions)
  • 6 slices of bacon
  • 2 tablespoons finely chopped parsley
  • ½ teaspoon seasoning salt
  • ¼ teaspoon white pepper
  • ¼ teaspoon ground red pepper
  • 1 (8 oz) cream cheese, cut into chunks
  • Shredded cheddar – just enough to put on top

Preparation

Step 1

1. Cook bacon until crispy, set aside to cool
2. Combine broth, potatoes, onion and spices
3. Boil potatoes until tender
4. Smash a few potatoes to release their starch for thickening
5. Reduce to low heat
6. Add cream cheese
7. Heat, stir frequently, until cream cheese melts

This can cook on low for a while, but you have to stir it frequently.
