Ingredients
- 9 potatoes, peeled
- 6 slices bacon, chopped
- 3/4 cup onion, chopped
- 2 tbsp flour
- 2 tbsp sugar
- 2 tsp salt
- 1/2 tsp celery seed
- 1/4 tsp pepper
- 3/4 cup water
- 1/3 cup white vinegar
Preparation
Step 1
Boil potatoes until tender but still slightly firm. Drain, cool and slice thin. Cook bacon in a skillet until browned. Drain bacon and set aside. Cook the onions in the bacon grease until tender.
In a small bowl, combine the flour, sugar, salt, celery seed and pepper. Add the flour mixture to the onions and stir until bubbly then remove from heat. Stir in water and vinegar and bring to a boil, stirring constantly. Boil and stir for 1 minute.
Carefully fold bacon and potatoes into the vinegar mixture. Stir gently until the potatoes are heated through.
