Almond Fingers


Fabulous cookies, especially nice at Christmas. I got this recipe and a batch of cookies from my friend, Kelly Hollenbeak. They make a nice gift to give to others.

  • 1 C. butter, softened
  • 1/2 C. firmly packed brown sugar
  • 1/2 C. granulated sugar
  • 1 egg yolk, lightly beaten
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. almond extract
  • 2 1/4 C. all-purpose flour
  • 1 package (6 ounces) semisweet chocolate chips
  • 1 C. finely chopped almonds

Step 1

Preheat oven to 350 degrees. Cream butter and sugars together until fluffy. Beat in egg yolks and extracts. Stir in flour. Shape teaspoonfuls of dough into 2-inch-long rolls. Place on lightly greased baking sheets. Bake 10-12 minutes or until very lightly browned around the edges. Remove from sheets and coll on wire racks. Melt chocolate chips. Dip ends of each cookie 1/2 inch into almonds. Allow chocolate to harden.
