  • 1 orange

  • 1 egg, beaten

  • 1 cup sugar

  • 2 T butter

  • ¼ t salt

  • 2 cups all-purpose flour

  • 1 ½ t baking powder

  • 1 cup cranberries, chopped coarsely

  • 1 cup pecans, chopped


Preheat oven to 350. Butter and flour 9 inch loaf pan. Squeeze the juice from the orange and grate the rind. Add enough boiling water to the juice and rind to make ¾ cup liquid. Combine the egg, sugar, and the butter and beat well. Mix together the flour, salt and baking powder and add to the egg mixture, alternately with the liquid. Mix well. Fold in the cranberries and pecans. Spoon into prepared pan. Bake for 45-60 minutes, or until a cake tester inserted near the center of the loaf comes out clean. Cool in the pan before removing.
