Ingredients

  • ½-1 lb bacon

  • 1 large onion chopped

  • 1 bell pepper chopped

  • 2 stalks celery chopped

  • 2 Tbs chopped fresh garlic

  • 1 lb black eye peas (soaked)

  • ½ tsp dried thyme

  • Bay leaves

  • Red pepper to taste

  • 14oz tomatoes (diced or whole)

  • 3 cups cooked rice (depends on how thick you want it)

  • 2 cans chicken broth(water will do)

  • 1 lb smoked sausage chopped into 1 inch cubes

  • Green onions chopped for garnish

Directions

Brown bacon in a Dutch oven. Remove bacon and eat it. Sautee onions and bell pepper and celery till onion is translucent in bacon grease. Add garlic being careful not to burn garlic Add chicken stock,sausage,peas and seasonings. Cover and let simmer for about 2hrs till peas are tender. Add tomatoes and cooked rice and cook uncovered, on low heat stirring often to prevent sticking Sprinkle green onions on top prior to serving
