Ingredients
- 2 cups flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 cut butter, at room temperature
- 1 1/3 cups sugar
- 1 tsp. vanilla
- 3 eggs, at room temperature
- 1 cup whole milk, at room temperature
- 1 1/2 cups unsweetened desciated coconut
Preparation
Step 1
Preheat oven to 350 degrees.
Prepare a 10 x 2 inch round cake pan.
Stir together the flour, baking powder, and salt.
Beat the butter until creamy, gradually beat in the sugar and keep mixing until pale and fluffy. Add the vanilla, and then beat in eggs, one at a time, the mix may loo curdled at this point.
Alternately add in the flour and milk, in 3 additions, mixing on low speed. Increase speed to medium and beat and additonal minute. Fold in coconut.
