Orange & Prosciutto Pasta

Ingredients
- 2 oz prosciutto, coarsely chopped
- 1 navel orange
- 1/2 cup heavy cream
- 1/2 cup finely grated parmesan
- 1/2 box whole wheat linguini
- 2 Tblsp butter or olive oil
Preparation
Step 1
Cook pasta according to the box directions, removing from heat about 2 minutes early. Drain, but reserve 1/4 cup of the pasta water for later.
While the pasta cooks, zest the entire orange and set aside. Cut the orange in half, juice it, and set aside.
Heat the oil or butter over medium heat in a large skillet, and brown the prosciutto (but not until crisp). Stir in the pasta water, orange juice, and a pinch of the zest, and bring to a boil.
Add the cooked pasta and another pinch of the zest. Stir to completely cover with sauce.
