Ingredients
- 125 grams pastry flour
- 5 grams baking powder
- 10 grams milk powder
- Pinch salt
- 125 grams sugar
- 10 grams emulsifier
- 150 grams whole eggs
- 100 grams water
- ¼ tsp. vanilla
- ¼ of a lemon zest
Preparation
Step 1
Grease and flour 2 9-inch pans; sift together the flour, baking powder, milk powder, salt, sugar, and emulsifier. Blend together the wet ingredients and add to the bowl. Mix on 3rd speed for 2 minutes, scrape the bowl and mix another 5 – 10 minutes. Divide batter evenly between the pie pans.
Bake at 375 degrees for 15 minutes. Invert cakes onto a sugared surface.
