Ingredients
- 3 c flour
- 2 t cinn
- 1 1/2 t nutmeg
- 1 t soda
- 1 t chipotle pepper
- 3/4 ground ginger
- 1/2 t white pepper
- 1/4 t salt
- 1/8 t cloves >> combine
- 1 1/2 c oil
- 1 3/4 c sugar > beat together.
- 3 eggs > beat in, one at a time
- 1 T vanilla>>add, then add flour mixture
- 3 c diced apple
- 1 c chopped pecans>>stir in.
- Put battter in a 10" sprayed & floured bundt pan.
- Bake 1 1/4 hours at 325. Cool in pan 10 min, invert on
- rack. Place over baking sheet.
- Spicy Caramel Glaze
- 1/2 c brown sugar
- 1/4 c butter
- 1/4 c whipping cream
- 1/2 t chipotle pepper>>Boil gently 2 min, stirring occ.
- Remove from heat.
- 1 t vanilla>>stir in. Let stand 1 1/4 hours (while cake
- bakes). Drizzle over cake. Scoop up the glaze that
- drips off & reglaze.
- Cool completely.
