Ingredients
- 3/4 cups flour blend (all-purpose, soft ww, wheat germ)
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup blanched, slivered almonds, finely ground in food processor
- 1/2 cup unsweetened applesauce or grated fresh apple
- 1/4 cup plain yogurt
- 1 tsp vanilla
- 2 T milk
- 1 egg
- 2 T honey or pure maple syrup
- 1/4 cup chocolate chips
- Butter or cooking spray for greasing skillet
Preparation
Step 1
Mix together flour, baking powder, salt, and ground almonds. Set aside. (To store for later use, triple dry ingredients and keep in sealed plastic bag for instant pancake mix.)
In another bowl, whisk the applesauce, yogurt, vanilla, milk, egg, and honey (or syrup). Add to dry ingredients until just blended. Add chocolate chips and mix lightly.
Oil griddle and heat. Drop tablespoons of batter and cook on both sides. Serve with warm maple syrup
