CORN CASSEROLE

Ingredients

  • 1 egg
  • 1 cup plain fat-free yogurt
  • ¼ cup (½ stick) butter, melted
  • 1 (8 ½ oz) package corn muffin mix
  • ¼ teaspoon sea salt
  • 1 cup corn (thawed, if using frozen)
  • 1 cup canned no-salt-added cream-style corn
  • 1 (4 oz) can diced green chilies, drained
  • Cooking spray

Preparation

Step 1

Preheat oven to 350 degrees. In a mixing bowl, combine the egg and yogurt. Add the butter, corn muffin mix, and salt. Add the fresh and canned corn and the green chilies. Stir until fully incorporated. Spray an 8 inch square baking or casserole dish with cooking spray. Pour the batter in the pan and bake for about 40 minutes or until set
