Roasted Summer Vegetables

Ingredients

  • 2 potatoes, peeled and cubed
  • 1 butternut squash, peeled and cubed
  • 1 sweet potato, peeled and cubed
  • EVOO
  • Salt/pepper

Preparation

Step 1

Preheat oven to 375 degrees. Prepare a baking sheet with foil and spray with cooking spray.

Place all chopped vegetables on the prepared cookie sheet. Drizzle liberally with EVOO. Add salt and pepper. Bake for 45 minutes or until vegetables are soft. Stir occasionally to prevent burning on one side.
