Ingredients

  • 1 1/2 lb bacon
  • 1 sliced sourdough round
  • 1 1/2 yellow onion - chopped
  • fresh Thyme
  • 2 eggs - beaten with a fork
  • 1 C chicken broth
  • 1 C half and half

Step 1

Cut bacon into small pieces- separating meat from fat as much as possible (reserve the fat). Cook bacon in skillet over medium heat until done. Cut bread into chunks. Place onion and into skillet with the bacon fat and saute-. Remove onion and add bread chunks and saute, may need to add some olive oil.

Place bacon, bread and onion in large bowl. Strip thyme leaves off stems and add to bowl. Mix eggs, broth and half and half with a little salt and pepper. Pour over bread mixture and stir.

Place in a buttered 9x11 pan and cook at 350 for 25-30 minutes.
