Ingredients
- 14 1/2 oz Italian-Style diced tomatoes, undrained
- 1 1/4 cup mozzarella cheese, divided
- 1/4 cup chopped fresh basil
- 6 oz Stuffing mix for chicken
- 8 small boneless skinless chicken breast halves
- 1/3 cup roasted red pepper Italian with parmesan dressing

Step 1
1. Preheat oven 350. Combine tomatoes, 1/2 cup cheese, basil and dry stuffing mix; stir just until moistened.
2. Place chicken in bag and pound chicken until chicken is 1/4in thick. Place chicken top side down, on cutting board; spread evenly with stuffing mixture. Starting at one of narrow ends, tightly roll up chicken. Place seamsides down, in 13x9 baking dish. Drizzle with dressing.
3. Bake 40 minutes sprinkle with remaining 3/4 cup cheese. Bake 5 more minutes or until chicken is cooked through and cheese is melted.
