1½ tablespoons thyme, 1 tsp onion powder, 1 tsp garlic granules
¼ tsp paprika, ¼ tsp cayenne, ¼ tsp sea salt
¼ tsp freshly ground black pepper
1 Tbs extra virgin olive oil
4 four ounce skinless chicken breasts, boned and defatted
Preheat oven to 400 degrees. Combine spices in a grinder and grind until well combined. Place spice mixture in a small bowl, add olive oil to make a paste. Rub paste on chicken. Heat skillet until very hot. Sear chicken for 1 minute on each side. Transfer to oven and finish cooking for 15-20 minutes or 5-10 for fish.
