Butterscotch Pie Filling

This was an old recipe that Aunt Dorothy gave me. Notice the ambiguity of some of the ingredients. That’s the way Aunt Dorothy and Aunt Mary cooked. By this way, this may be the recipe for two pies. I have another recipe from Betty for Butterscotch pie. Her ingredients were almost (in every case) half the ingredients in this recipe.

Ingredients

  • Large chunk of butter, let brown
  • Add 1 ½ cup brown sugar and let brown well
  • Add 8 Tbsp milk, boil 5 minutes
  • 2 big cups milk, heat to boiling point.
  • Thicken with 3 egg yolks, 4 T cornstarch, thin with milk. Put beaten whites on top, brown.
