SHRIMP-STUFFED SOLE

Ingredients
- 4 Sole fillets, halved lengthwise
- 1 Tbsp Lemon juice
- 1/8 tsp Onion powder
- ¼ cup Melted butter, divided
- 6 oz Small shrimp, rinsed & drained
- 1/3 cup Milk
- ¼ cup Chopped celery
- 2 tsp Parsley
- 1 cup Toasted bread crumbs
- Dash Paprika

Preparation
Step 1
Sprinkle sole with lemon juice & onion powder; set aside. Pour 2 Tbsp butter into an 8” square microwave-safe dish. Add shrimp, milk, celery & parsley. Cover & microwave on high for 1-1 ½ minutes or until celery is tender. Stir in bread crumbs.
Spoon shrimp mixture onto fillets. Starting with a short side, roll up each & secure with toothpicks. Place in a greased shallow microwave-safe dish. Brush with remaining butter; sprinkle with paprika.
Cover & microwave on high for 4-6 minutes or until fish flakes easily with a fork. Let stand for 5 minutes. Discard toothpicks.
