- 1 lb macaroni
- 3 medium onions chopped
- 1 cup plus tblsp butter divided
- 2 lbs ground beef
- 3 tblsp tomato paste
- 1 tblsp salt
- 1/4 tsp pepper
- 1 tsp cinammon
- 1/2 tsp nutmeg
- 1 lb shredded Greek cheese: Kefalotiri
- 7 eggs slighly beaten
- Cream sauce:
- 5 tblsp butter
- 8 tblsp flour
- 1 qt. milk scalded
- 3 beaten eggs
- remaining cup of cheese from above
Boil macaroni in salted water
Drain and return to pan
Brown meat and onions in 2 tblsp butter.
Add tomato paste and thinned with water. Add all the seasonings cook until meat is done. Allow to cool.
Melt 1 cup butter and pour over macaroni along with all but one cup of cheese. Add eggs and meat sauce, mix carefully to blend ingredients. Pour into large baking pan. Cover with cream sauce.
Place butter in sauce pan, add flour. Add hot milk and cook until thickened, stirring constantly. Allow to cool, add eggs, and one cup cheese. Spread over macaroni. Beat another egg, and brush over top of cream sauce.
Bake at 350 for 60 minutes, or until golden brown.
