- 1 1/4 matzo meal
- 1/4 c orange juice
- 3/4 cup concord grape wine
- 4 eggs,separated
- 1/4 cup sugar divided
- 1 apple, peeled and grated
- 1/4 cup almonds, toasted and chopped
- Oil for frying
- powdered sugar or cinnamon sugar for sprinkling
Heat oil to 1/2 inch in iron skillet
In a medium bowl combine the matzo meal, orange juice, wine, egg yolks, 3 T of the sugar, grated apple and almonds. Whip the egg whited to stiff peaks, gradually adding the remaining 1 T sugar. Stir a big spoonful of the beaten whites into the batter to lighten it. Gently fold in the remaining whites.
Drop big spoonfuls of batter into the oil to form the latkes, being careful not to crowd the pan.
Flip once. Drain on paper towels.
Sprinkle with powdered sugar or cinnamon sugar and eat
