Salmon Orzo with Tomato and Avocado

Ingredients

  • 1 lbs Salmon Filets
  • 8 oz orzo
  • 1 cup sliced sundried tomato in oil
  • 1 1/4 cup feta marinated in oil and spices
  • 1 avocado, cubed
  • 3 tsp soy sauce
  • 2 tsp red wine vinegar
  • 1/2 lemon, for juice
  • salt and pepper to taste

Preparation

Step 1

1. Marinate salmon for 1 hour in 2 teaspoons soy sauce, lemon juice, salt and pepper.

2. Cook orzo according to directions. Pan fry, or grill salmon, about 6 minutes per side.

3. Cut cooked salmon into cubes or rectangular strips. In a large bowl, combine orzo, salmon, tomatoes, feta and avocado. Pour vinegar, remaining soy sauce and a splash of lemon juice on top. Toss and serve.
