Gnocchi with Fresh Chicken Sausage and Broccoli Rabe

Ingredients

  • Salt
  • 1 package (12 to 16 oz.) fresh or frozen gnocchi
  • 2 bunches broccoli rabe, trimmed and chopped
  • 4 T olive oil
  • 1 1/2 lbs. chicken sausage, casings removed
  • 1 small onion, finely chopped
  • 3 large garlic cloves, finely chopped
  • 1/4 t. crushed red pepper flakes
  • Zest and juice of 1 lemon
  • Crusty bread

Preparation

Step 1

Bring large pot of water to a boil and cook gnocchi. Once the water is boiling, add salt and gnocchi. Right before draining, remove and reserve about 1 1/2 C cooking liquid.

While teh water for the gnocchi is coming to a boil, bring 2 inches of water to a boil in a large high-sided skillet. Add some salt and the broccoli rabe and simmer for 5 minutes. Drain and reserve.

Return the skillet to the stove and heat 2 tablespoons of olive oil over medium-high heat. Add chicken sausage and break it up while it cooks and browns, about 6 to 7 minutes. Add onion, garlic, and red pepper flakes to sausage and cook for another 3 to 4 minutes or until the onions start to get tender. Remove the sausage and onions from the skillet and reserve. Add remaining 2 tablespoons of olive oil to skillet and heat. Add drained gnocchi and brown lightly for a couple of minutes. Return sausage, onions, and rabe to skillet. Toss to combine and add reserved pasta cooking liquid. Turn heat to high and simmer for 1-2 minutes. Stir in lemon zest and juice. Serve with bread.
