Tex-Mex Crustless Quiche

All the great flavors of Tex-Mex can be found in this crustless quiche - sour cream, beans, cheese, salsa and more. Enjoy!
Ingredients
- 3/4 cup sour cream
- 2/3 cup baking mix
- 3 eggs, beaten
- 1/4 teaspoon black pepper
- 1 (15-ounces) can black beans, rinsed and drained
- 1/2 cup green onions, finely chopped
- 1 cup cheddar cheese
- 2 Roma tomatoes, seeded and finely chopped
- 1 small jalapeno pepper, seeded and finely chopped
- 1/4 cup Pico de Gallo or Salsa

Preparation
Step 1
Heat the oven to 325°F.
Spray the bottom and sides of a 9-inch glass pie plate with nonstick spray.
In a large bowl, whisk together the sour cream, baking mix, eggs, and pepper.
Stir in the beans, onions, cheese, tomatoes and jalapeno. Pour the mixture evenly into the pie plate.
Bake the quiche for 45 to 55 minutes or until a knife inserted in the center comes out clean. Cool for at least 10 minutes. Cut into six slices and garnish each slice with a spoonful of Pico de Gallo or Salsa.
