Warm Chocolate Cakes (Molten Cakes)

Ingredients

  • 1 c. (2 sticks) butter soft
  • 8 oz chocolate (6 bittersweet & 2 semisweet)
  • 1/2 t. instant expresso powder (can skip)
  • 4 large eggs
  • 4 large egg yolks
  • 2/3 cup sugar
  • 4 t. flour
  • berries
  • whipped cream

Preparation

Step 1

_pam with flour 8 ramekins_

1. preheat oven to 450
2. melt chocolate, butter and expresso in microwave until smooth and melted (20 sec at a time) - allow to cool slightly
3. beat eggs, yolks, sugar until light and fluffy pale in color
4. reduce speed and add chocolate mixture
5. add flour until just combined
6. spread equally b/w ramekins - place them on a baking sheet
can refrigerate for 8 hours before cooking
7. cook for 10 min - top and side are cooked and dry the center runny
8. use oven mits and invert onto plate - add berries and whipped cream - serve warm
