Ingredients

  • 2 cups flour
  • 2 teaspoons Magic baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons (fine) cornmeal
  • 1 1/2 tablespoons sugar
  • 1 egg
  • 1/2 cup milk
  • Vegetable oil for deep frying
  • For dusting
  • about 1/4 cup icing sugar

Preparation

Step 1

Mix flour, sugar, baking powder, salt and cornmeal.

Beat the egg. Add the milk to the beaten egg. Mix well.

Incorporate wet ingredients with the dry ones. Mix until the batter is smooth.

Heat the oil.

Take about a tablespoon of the batter and drop into the hot oil. Repeat, until there are a few in the pan. Cook until golden brown, turning the fritters over so that they are even in color.

Drain on paper towels.

Keep in fridge until needed.

Dust with icing sugar before serving.
