Ingredients

  • 1 Tbsp brown sugar
  • 1 Tbsp fish sauce
  • 1 Tbsp low sodium soy sauce
  • 1 Tbsp lime juice
  • 1 tsp ground chile paste
  • 1/4 tsp salt
  • 2 large eggs
  • 1 bunch green onions
  • 2 Tbsp peanut oil
  • 2 1/2 cup cooked and cooled brown rice
  • 1/4 cup vertically sliced shallots
  • 12 oz of chicken breast cut into pieces
  • 2 cups broccoli florets
  • 1 cup julienne cut red pepper
  • 1 1/2 tsp minced garlic
  • 2 bacon slices
  • 4 lime wedges

Preparation

Step 1

Combine first 4 ingredients, 1/2 tsp chile paste and 1/8 tsp salt. Combine eggs and remaining chile paste. Separate green tops from green onions and chop diagonally into one inch pieces.
Heat skillets and add peanut oil. Add rice and sitr fry for 1 1/2 minutes. Transfer rice to bowl. Stir fry shallots and chicken until browned. Add brown sugar mixture and simmer until thickens. Add chicken to rice. Stir fry broccoli and pepper until tender. Then add green onion and garlic and fry for one minute. Add chcie an cook 2 minutes. Add egg mixture to small frying pan and cook for 30 seconds, Chop egg and bacon and add to rice mixture. Top with green onion tops and garnish with lime wedges.
