Ingredients
- 1 1/2 lbs potatoes, quartered,and well rinsed
- 1 tbs. butter
- Salt and pepper
- 3 tbs. oil
- 1 medium onion, chopped
- 1 carrot, peeled, and chopped
- 1 celery stalk, chopped
- 1 lb. ground beef
- 1 tbs. flour
- 3/4 cup beef stock
- 1 tsp. dried thyme
- 1 tsp. dried rosemary
- Salt and pepper
Preparation
Step 1
Boil potatoes until tender, about 15 minutes. Drain, reserving 1/2 cup of the cooking water. Mash, adding the cooking water as well as the ubtter, and season to taste.
In a deep skillet heat the oil and add the onion, carrot, and celery; cooking until softened; about 15 minutes.
Increase heat and add the beef, cooking 5 minutes and then spoon off fat. Add the flour, stirring for 3 minutes and then add the stock, herbs, and seasonings.
Simmer on low heat until thickened and then cool slightly. Add the meat to a 9 inch baing dish and spoon the potatoes over top.
Bake until the potatoes are browned and the dish is heated through.
