Ingredients
- 1 cup heavy cream
- 1/2 cup thick, Greek-style yogurt
- 2 bananas
- 1 Tbsp lemon juice
- 4 Tbsp maple syrup
- 3 Tbsp soft light brown sugar, to finish
Preparation
Step 1
Whip the cream in a large bowl until it forms soft peaks, then fold into the yogurt. Peel and mash the bananas on a plate with a fork, then work in the lemon juice. Fold the bananas and maple syrup into the cream mixture.
Place 6 ramekins or custard cups on a small try and divide the banana cream mixture between them. Smooth the surface of each one, then chill until ready to eat.
Just before serving, sprinkle the brown sugar over the tops of the desserst and caramelize with a blowtorch. Leave for a minute or two to harden, then serve.
