Cashew Butter Toffee

  • 1 lb. butter
  • 2 cups sugar
  • 1 lb. cashews, lightly salted



Step 1

Melt butter in heavy saucepan over medium heat. Dissolve sugar and boil slowly until temperature reaches 290º. It will go through several stages until t turns a toffee color. Remove from heat and add cashews. Pour onto jelly roll pan and spread to flatten. After 5 minutes, score into squares to allow for easier breaking after it is completely cool.
