  • 8 Buttermilk Crepes

  • 1 lb. fresh mushrooms

  • ¼ cup finely minces shallots of green onions

  • 6 tbs. butter

  • 1 cup finely chopped ham

  • salt and white pepper

  • 1 cup sour cream

  • Creamy Mustard Sauce


Make crepes as directed and set aside. Chop mushrooms very finely and combine with shallots. Melt butter in skillet. Add mushrooms and shallots. Sauté over high heat 3 to 4 minutes. Add chopped ham, salt and pepper. Cook until mixture is dry. Fold in sour cream just before assembling the crepes. Fill and roll crepes. Place in buttered, ovenproof serving dish. heat ant 350 oven 10 to 15 minutes. Top with Creamy Mustard Sauce.
