Family Potato Salad

Ingredients

  • 4 lbs baking potatoes (8 large)
  • 3 hard cooked eggs, grated
  • 1 cup mayo
  • 1 tbs spicy brown mustard
  • 1 1/2 tsp salt
  • 3/4 tsp pepper

Preparation

Step 1

>Cook potatoes in boiling water to cover 40 minutes or until tender, drain and cool, Peel and cut into 1 inch cubes.
>Stir together potatoe cubes and eggs
>Stir together mayo and next 3 ingredients, gently stirring into potato mixture. Serve immediately, or cover and chill.

Red Potato Salad: Subsitute 4 lbs red potatoes for baking potatoes.
Potato with swee Pickle: Add 1/3 cup sweet pickle relish (or I prefer dill) to mixture.
Potato Salad with Onion and Celery: Add two ribs celery diced and 1/2 small sweet onion diced to potatoe mixture
