Bourbon peach cobbler

Ingredients
- 8 peaches, peeled and sliced
- 1/4 cup bourbon
- 3/4 cup sugar
- 2 tbsp cornstarch
- 1 tsp cinnamon
- 1.5 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 sticks cold butter
- 3/4 cup heavy cream

Step 1
Preheat oven to 375. Combine peaches, bourbon, 1/4 cup sugar, cornstarch and cinnamon in a large bowl and toss to coat.
Sift flour, 1/2 cup sugar, baking powder and salt into a bowl. Cut 1.5 sticks of butter into small pieces, add to the flour mix and cut it in with a pastry blender until crumbly. Pour in cream and mix just until the dough comes together. Don't overwork.
Melt rest of butter in a skillet over medium low heat. Add peach mix, cook gently, 5 minutes. Transfer mix to a 2 quart baking dish. Drop dough by spoonfulls over warm peaches. Brush top with heavy cream and sprinkle with sugar.
Bake in oven on a baking sheet until top is browned and fruit is bubbling, 40-45 minutes. Serve warm with ice cream.
