Pork Tenderloin with Cucumber Relish

  • 3 cloves garlic
  • 1 jalapeno pepper, minced
  • 2 tsp ground cumin
  • 2 tsp dried thyme
  • 1 1/4 tsp salt
  • 2 pork tenderloins
  • 1 cucumber
  • 1/2 green pepper, chopped
  • 1 tbsp lime juice
  • 1/2 tsp grated lime juice


Servings 6


Step 1

Heat oven to 425F. Combine garlic, jalpeno pepper, cumin, thyme and 1 tsp salt. Rub 1/2 the mixure on each pork tenderloin. Put pork ina shallow roasting pan and roast about 25 minutes.
Combine cucumber, green pepper, lime juice, zest, 1/4 tsp salt and pepper to taste. Set aside. When pork is done, cut in diagonal slices and serve with the relish.
