Ingredients
- 1 lb round steak oc coarsely ground beef for chili
- 1 lb beef chuck steak
- 1/2 cup vegetable oil
- 1 can (8 oz) tomato sauce
- 1 can (12 oz) beer
- 1/4 cup chili powder
- 1 1/2 tsp minced garlic
- 1 tsp chopped onion
- 1 1/4 tsp oregano leaves
- 1/2 tsp paprika
- 1 1/4 tsp salt
- 1 tsp ground cumin
- 1 tsp cayenne pepper, or to taste
- 1/2 lb goat cheese, grated
- 1/2 tsp cumin seed

Step 1
In skillet, sear beef in oil until brown. Transfer meat to a 2-quart cast iron pot. Add tomato sauce and beer; bring liquid to a boil. Meanwhile, add chili powder, garlic, onion, oregano, paprika, salt, and cumin. Cover, reduce heat, and simmer 1 hour, stirring occasionally.
Add cayenne and simmer, covered, 2 hours longer, stirring often. Add goat cheese and cumin seed and stir frequently while cooking, uncovered, another 30 minutes.
