BFL - Mile High Baked Potato
- 1 potato
- 2 tsp. fat free, reduced sodium chicken broth
- 1/4 cup low-fat cottage cheese
- 1/4 cup cooked chicken, chopped
- 1/4 cup broccoli
- 1/4 cup salsa
- 1 Tbs. fresh cilantro chopped
Cooking time 15mins
Pierce potato and microwave on hight 5-8 minutes until tender. Let stand for 1 minute.
Cut at X on top of the potato andpress ends slightly to open. Pour chicken broth inot opening.
Top potato with cottage cheese, cooked chicken, broccoli and salsa. Place filled potato in microwave and cook on high for 30 more seconds.
Sprinkelw with fresh cilantro.
