Ingredients

  • Filling:
  • 8 cups fresh or frozen raspberries or blackberries
  • 3/4 cup sugar
  • 2 tbsp. instant tapioca, finely ground
  • 1/2 tsp. salt
  • 1/4 cup fresh orange juice
  • Crust:
  • 1 cup AP flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • Cream:
  • 1 stick unsalted butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • Minced zest of one orange

Step 1

Preheat oven to 350. Toss berries with filling mix. Transfer to 2 1/2 quart baking dish, about 2" deep. Combine flour mix. Cream butter and sugar in large bowl and using mixer, mix at medium speed until light and fluffy, 3-5 minutes. Add eggs, Vanilla and zest - beat on medium until combined. Beat in flour mix until a moist dough forms. Spoon over berries. Bake until thick and bubbly and topping is golden brown, about 1 1/4 hours. Let cool and serve.
